Umami is one of the five basic tastes, along with sweet, sour, bitter, and salty, and is often described as a savory or meaty taste. Intense cheese, such as aged cheddar or Parmesan, develops a rich and complex flavor profile through the breakdown of proteins and fats during the aging process, resulting in a strong umami taste that contributes to its savory quality. Additionally, the salt content in intense cheese enhances its savory flavor, making it a popular choice for adding depth and richness to dishes. **
